
Durban-style mutton curry with extra thick gravy.

Method
Wash the mutton, cut it into cubes and let the water drain.
Heat the oil in a pot. Add the onion, bay leaves, fennel seeds and green chillies. Fry until the onion changes colour, without burning it.
Add the crushed ginger and garlic, then the masala powder. Let this cook for a few seconds, taking care not to burn it.
Add the meat and stir it into the mixture. Fry for a few minutes, turning frequently.
Add some boiling water and stir it in, then add the salt and tomatoes.
Cover the pot with a lid and cook over high heat for about 30 minutes.
Add the potatoes and more boiling water so the water is above the potatoes. Cook for another hour over low heat.
Continue cooking until both the meat and potatoes are soft. Taste a small piece of mutton to check its tenderness.
Simmer for a further 10 minutes without the lid, then switch off the heat.
Garnish the curry with coriander and close the lid. Serve with bread or rice.
Pregan’s gravy and spice notes
For extra gravy, add more tomatoes or tomato purée and extra boiling water towards the final stages of cooking. Grating in a whole potato also helps thicken the gravy.
I use my own mixed masala curry powder. Use less masala or curry powder to suit your preferred heat.
